So how much does Vivio's mental state change when she goes Adult Mode? There's a big difference between how someone's mind works before and after puberty.

Ah, I really couldn't say. The manga seems to imply that her adult form is actually a powerful glamor spell along the lines of Negi's Age Candies or the transformed state of the main heroines of W.I.T.C.H., but you rarely see her interact in that form outside of mock combat.
