She seems bitter and used to being hated and he tends to empathize a lot with people who feel ostracized. If she gets really mean and crosses a line, he will stick up for himself or just go off and ignore her, but in the meantime, he actually plans to be kinda nice to her, wondering if that could help her feel less hated.

He's been trying to reach out to Jamie as best as he can, but isn't quite sure how to break through his shell and still being kinda unsure of himself and having self esteem issues in general, he's not sure if Jamie's just antisocial or not interested in being his friend.
He plans to keep trying, though, and even if they don't hit it off as friends, still wants him to realize he's a friendly acquaintance he can turn to for help or favors or anything he needs. He's not sure if they have the personalities to be friends, since he's having trouble getting to know what Jamie's is, but he does want him to not feel alone or isolated.

Sees a potential friend in her and minimally, after seeing some of her work around the ship, a respected fellow craftsman, much more talented than he. He also thinks it took tremendous personal character for her to be kind to Big Zero after her Punishment given how hateful Big Zero is.

Hiccup does see him as another father figure, kinda like Gobber, but out of respect for his own dad, yada yada, you know the drill. He admires him. In many ways he wants to be like him, strong and capable and composed and confident.
He does not, however, truly understand the extent of the neutrality of Kang's morality sometimes, that he's so deeply in the shades of gray. He thinks someone as loyal as Kang is has to be pretty decent, but there'd likely be a lot of moral issues they disagree on.
He'd still care about him anyway, if he knew all Kang did and helped do in the past, and would forgive him, but he wouldn't forgive any of those dark and muddled things he'd still think were right to do in the present. Now that Hiccup is growing up, getting more confident, standing up for himself more, standing up for others more and for what he feels is right, I think they might wind up clashing eventually, and it'll be all the more painful and difficult because of the very genuine fondness and even almost-familial love the characters have for each other.

It'd really help with his prejudices though, if bug-aliens stopped being entirely horribly evil and willing to tear out of his stomach, and if demons and things stopped, y'know, possessing him or what have you.

Okay, Zuko? Zuko really helped him in a way that even saving the village hasn't. He can't fight, and he'd kinda given up on himself in that regard, thinking his brain's the only good thing about him.
But fuck that, because you know what? He can fight. Maybe he needs to get stronger first, maybe he needs to learn, and practice practice practice, maybe it'll be hard and he'll have to find his own special way of doing it, but if he wants to, and works hard enough at it, he CAN do it.
Rather than shutting him down or even going "Hiccup, you cannot do this thing, but that's okay because you can do these other things," Zuko's been totally honest about the hard work required, but not just shut him down and told him he can't do something he really wants to know how to do. He's willing to invest time and effort into him that is worth far more than that single set of dao Hiccup is going to make for him real soon.
That faith is an incredible thing to him, and something he takes as a treasured gift, and there are very few people in his life that have ever offered it that freely.
One of the others was Toothless, just to give you a mind of the closeness there, and how treasured it is. Even with Astrid, Hiccup had to earn it, by showing her what he was capable of.
Zuko is a bro among bros, and the more Hiccup finds out about him, the more he'll admire him, as what he instinctually guesses about him will revealed to be true, as he finds out the trials Zuko went through were even more difficult than what he imagined--that the hardship he imagined Zuko went through will turn out to be something that might have completely broken Hiccup.
Right now, Hiccup really values his faith in him and friendship, he admires what he thinks is Zuko's character--as he finds out more about him, he'll admire his character even more, and think he's one of the absolute, most admirable people he knows.
So you know how Zuko considers Hiccup the first friend he ever really just made? Zuko isn't that for Hiccup (Toothless is), and he's not the first human best friend he's ever made (that'd be Astrid), but he'll be like his first best best friend. No romance like with Astrid (though I will confess he has some slight sliiiight admiration for his physique and hardassossity) not because Zuko was the first to reach out to him, like Toothless, but just because he will so totally admire and genuinely like who he is, flaws and good things and all.
Zuko is not his brother and never will be, but he is his bro, and his friend, and will probably be a best friend, and for a kid who had so very few friends, that will be tremendously valuable to him, and he'll eventually be willing to die for him, get tortured for him, do all that hugely loyal stuff the broest of bros are willing to do for each other.
